Farm-Fresh Vegetables

Freshness is key to flavor. Our vegetables are grown with care, beginning with soil preparation, and harvested at their peak in close coordination with our chef. Suruga Bay Seafood

Fresh seafood caught daily by Heda’s local fishermen is delivered straight to our kitchen. Suruga Bay—up to 2,500 meters deep and touched by the Kuroshio Current—is home to an exceptional variety of marine life.
